Satisfy your sweet cravings with 🍋lemon pudding cake. Great lemon flavour, sweet yet without too much refined sugars – thanks to natural sweetener (stevia)! Milk will also provide some calcium and vitamin D – great for bone health.
Makes 6 six inch ramekins
Ingredients
1 ½ cup milk
3 tbsp lemon zest
½ cup lemon juice (~3 lemons)
¼ cup sugar
¾ cup granular Stevia (or Splenda)
¼ cup all purpose flour
½ tsp baking powder
⅛ tsp salt
2 eggs separated, plus 2 egg whites
½ tsp vanilla extract
Directions
Step 1
Preheat the oven to 325°F (160°C) & place oven rack in the middle. Place six (6-inch) ramekins in a large roasting pan, set aside.
Step 2
In a saucepan on medium heat, bring milk to a simmer, then remove it from heat. Mix in lemon zest and let it rest for 15 minutes, covered.
Step 3
In a medium bowl, whisk flour, stevia, baking powder and salt.
Step 4
In a separate bowl, strain milk to remove the zest, while pressing on the zest to extract its liquid. Whisk in egg yolks, vanilla, and lemon juice. Combine with dry ingredients to form a batter.
Step 5
With a stand or handmixer, whisk egg whites on medium-low speed for 1 minute, then medium-high for another minute. Gradually add ¼ cup sugar while beating until soft peaks form.
Step 6
Fold in ¼ of whites into the batter. Gently fold remaining whites with a spatula until smooth. Ladle batter into ramekins (full). Pour cold water into the roasting pan to cover ⅓ of the ramekins.
Step 7
Bake for 50-55 minutes or until the cake is golden brown and the pudding is well done. Let it stand in the water for 10
minutes, then cool completely on a wire rack before serving.
Tips
Creating soft peaks with egg whites can be tricky, so make sure to not overly beat the whites (maybe even watch a video on how to do it before attempting if you’re unsure).
