Banana Chocolate Chip Cookies Recipe
These cookies have a soft cake-like texture and balance natural sweetness (banana) with the sweetness of chocolate chips! Overly sweet cookies aren't always tasty (let alone healthy), with the cookie super sweet as well as the chocolate chips - leaving you reaching for water right away!
Makes 18 cookies
Ingredients
3/4 cup margarine
1 cup mashed bananas
2 large eggs
1 tsp maple syrup or vanilla extract
2 1/4 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 - 3/4 cup semi sweet chocolate chips
Directions
Step 1
Preheat the oven to 375°F & line 2 baking sheets with parchment paper.
Step 2
Combine flour, baking soda, and salt. Set aside.
Step 3
Beat margarine and mashed bananas together on medium speed until combined. (Make sure not to over mix).
Step 4
Add maple syrup/vanilla and eggs & beat on low until combined.
Step 5
Gradually fold in dry ingredients (without over mixing) just until flour is no longer visible.
Step 6
Fold in chocolate chips.
Step 7
Form & place cookies on the baking sheet. Bake for 10-12 minutes (or 15 mins for extra crunch).
Step 8
Let cookies rest on baking sheet for 2 minutes and then cool on a wire rack.
Tips
if you like crunchy cookies, extend the baking time to 15 mins.
